Luke Mangan

Luke Mangan – one of Australia’s leading chefs and restaurateurs, he is highly regarded internationally as a shining example of Australia’s culinary culture. Managing the award-winning glass brasserie at Hilton Sydney, Luke also owns and operates numerous other restaurants across Asia Pacific as well as Salt Grill on board P&O Cruises and consulting for the Virgin Airlines.

 
Grant Collins

Grant Collins – named as one of the World’s Best Bar Tenders by Travel and Leisure, Grant is one of Sydney’s leading mixologists and has been working with Zeta Bar since the hotel’s relaunch in 2005. Under his guidance, Zeta has won over 18 awards and launched unique concepts including Vintage Nights, a Cryogenic Sorbet Bar and Tiki Bar.

 
Michael Bourne

Michael Bourne - General Manager of Hilton Sydney has an extensive hospitality career spanning almost 30 years experience throughout Australasia. His most recent posting was as the Opening General Manager of Hilton Melbourne South Wharf. Michael joined Hilton Hotels in 2003 as General Manager of the award-winning Hilton Melbourne Airport before moving on to manage Hilton Brisbane.

Our Sculpture

The sun-filled 20metre lobby of Hilton Sydney proudly displays a magnificent aluminium sculpture by renowned Australian sculptor, Bronwyn Oliver. Oliver’s coiling spiral design is suspended from the lobby ceiling and twists down four levels into the spacious atrium. The breathtaking sculpture and symbol of Hilton Sydney, featuring thousands of tiny aluminiumpieces, took Oliver, an engineer, and a meticulous team of welders almost nine months to assemble.
